The recipe here uses lime, coconut water, greek yogurt, sweetener of choice, ice cubes, and mint as a garnish. 

You can use coconut milk instead of coconut water and yogurt, for the same creamy texture. Or omit the yogurt for a lighter drink. 

Other additions that work well with watermelon in smoothies include strawberries, cucumber, and any other form of melon.

This watermelon smoothie includes lime and cocnut water for a refreshing low calorie and diet friendly summer drink.

Ingredients

  • 4 cups cubed watermelon (seeds removed)
  • Juice of 1 lime
  • 1/2 cup Greek yogurt (for a creamy texture, optional)
  • 1/3 cup coconut water (or liquid of choice)
  • 1-2 tablespoons honey or agave syrup (optional, depending on sweetness of the watermelon)
  • A handful of ice cubes
  • Fresh mint leaves (for garnish)

Instructions

  1. Prepare the Watermelon: Remove the seeds from the watermelon and cut it into cubes. For a thicker smoothie, you can freeze the watermelon cubes beforehand.
  2. Blend Ingredients: In a blender, combine the watermelon cubes, lime juice, Greek yogurt (if using), honey or agave syrup (if needed), liquid, and ice cubes. Blend until smooth.
