This treat has enough fiber from oatmeal and protein to slow the absorption of sugar and help you get a bit of a boost without making your blood sugar spike and then plummet. Use it a s special treat, as a post workout shake, or for breakfast.
- ¼ cup steel-cut oats
- 12 unsalted almonds
- 2 T unsweetened cocoa powder
- 3 T maple syrup
- About 1 ½ cups vanilla unsweetened coconut milk (to the fill line)
