Lemon Blueberry Coconut Smoothie

This lemon, blueberry, and coconut Nutribullet recipe includes Chia seeds which are rich in Omega-3 fatty acids. If you like frothy smoothie, use frozen blueberries. If you want extra smoothness, toss in some banana.

This is a Diabetic Friendly Smoothie! Very low in cholesterol and high in fiber.
Ingredients
  • 2 tbsps coconut milk
  • 1 tsp chia seeds
  • 1 tbsp lemon juice
  • ½ cup blueberries
  • Coconut water to fill line
  • Shredded coconut as garnish
Instructions
  1. Add all ingredients to your large nutribullet cup, saving coconut water for last.
  2. Once you have filled the cup with coconut water to the fill line, puree ingredients to desired consistency.
  3. Garnish with shredded coconut if desired

  1. Good recipe. Did not have any blueberries handy in the household, so I used raspberries. Very nice and very refreshing. Found that you needed to add more berries to achieve a certain ‘thickness’ to my liking of a beverage.
